Dan Latham

DAN LATHAM
CHEF

Chef Dan Latham made a name for himself in notable establishments in New York City, followed by his own immensely popular Latham House.

A true new yorker and from a family of chefs, his own culinary journey was ignited by his passion for the city's diverse food scene. Drawing inspiration from his upbringing in Upstate New York, Chef Latham cherishes memories of skilled family cooks and joyous gatherings. 

Now, Chef Latham is excited to bring his expertise and elevated comfort cuisine to The Table at 3 Acres in Jersey City.

GINA BIELICKA  
DIRECTOR OF HOSPITALITY

Gina Bielicka is an accomplished hospitality professional with over two decades of experience. Her journey began at the age of 14, scooping ice cream and building paninis at a small Italian café. This early exposure to the industry ignited a passion for the hospitality industry. 

Over the years, Gina has worked through various roles in hospitality, including serving, bartending, event management, branding and marketing, and social media management. Her dedication and creativity has been instrumental in the success of numerous NYC and NJ based establishments.

Gina is passionate about making guests feel exclusively welcomed, creating an inviting atmosphere, and providing exceptional service that exceeds expectations to create an unforgettable experience.​​

PAUL LEMONIER
GENERAL MANAGER

For Paul, working in restaurants started as a way to pay the bills, but it wasn't long before he realized there's so much more to it than simply taking orders and fetching food and drink for customers. He discovered the nature of hospitality. The devil's in the details, and hospitality requires an immense amount of attention to detail. Having worked in many prestigious restaurants over the years (Fleming by Le Bilboquet, Boulud Sud, Bar Boulud), Paul brings a wealth of knowledge he seeks to share with the team here at The Table. The success of having shown someone a truly wonderful time is an immensely rewarding experience. Getting to know each and every guest and cultivating an environment of warmth and welcoming is what he strives for each day.

JUAN ARBOLEDA
BEVERAGE DIRECTOR

Juan began his career as a doorman at Employees Only and Macao Trading Company before transitioning to Café Tallulah, where he swiftly rose to principal bartender. He honed his skills further at Los Americanos in Tribeca, progressing from bar back to bar manager in just three months. In 2013, Juan joined Blackwood Hospitality as Mixologist and Beverage Director, overseeing staff hiring and training, cocktail program design, and product procurement. He's played a pivotal role in launching 20 restaurants and bars, including The Harold, Eastside Cantina, and Oxbow Tavern. Juan's expertise extends to TV appearances and features in publications such as Chilled Magazine and Imbibe. He's also served as Beverage Director for establishments like The Hotel Indigo Newark's Alva and Darrow’s Farm Fresh Takeout, showcasing his talent for crafting unique cocktails and training staff to embody hospitality excellence.
